1 1/4 cup whole milk
1 cup all purpose flour
Pinch of salt
3 eggs
Vegetable oil
Whisk together milk, eggs and salt. Add the flour to the milk by sifting it into the bowl while whisking.
Refrigerate for at least 30 minutes.
Preheat the oven to 450 degrees F. Preheat a 12 cup popover or muffin pan with a generous amount of oil in 8 of the cups.
Fill cups about 7/8 of the way up and bake for 18 minutes. DON'T open the oven door or they won't rise.
After 18 minutes turn the heat off in the oven but don't remove them and DON'T open the door.
Leave them alone for at least 15-20 more minutes. Remove and serve warm with gravy or butter.
