1/2 cup fat free liquid egg or egg white substitute (or use enough whole eggs to measure 1/2 cup)
1 ounce of chopped cooked chicken breast (or any cooked meat of your choosing)
1 ounce of cheese chopped (or 2 slices of your favorite cheese or 1 Mini Babybel Cheese)
Seasoning Optional (onion powder, garlic powder, marjoram, basil, what ever you like)
Spray a large microwave-safe mug with non stick spray. Add egg substitute and microwave for 1 minute.
Gently stir. Add meat and cheese. Microwave for 1 minute, or until scramble is just set.
If you like, here is where you add a little of your favorite seasoning. Give it a light stir, and then dig in!
